“Food experimentation from antiquity to the modern age”

In this round table, specialists in different fields and on different periods – archaeologists, historians, botanists, physicians – will tackle the topic of food experimentation from 3000 BC to 1500 AD: the need to find new foods for a growing population and the need to try new products from other cultures and hitherto unknown foods.

The experts use emblematic cases to discuss the impact of these foods on survival and health and the methods and necessities that spread and developed over the centuries from Africa to the Mediterranean, Asia and America.
